The Foundry Grill: A great stop after a ski day

For my second restaurant review here in Utah, I visited The Foundry Grill, a restaurant previously owned by actor Robert Redford. Redford purchased the land now known as Sundance in 1969, adding a touch of Hollywood history to the location.

After a morning of skiing at Sundance Resort, my appetite was growing, and The Foundry Grill seemed like the perfect solution. Due to its popularity and high demand, we made a reservation for 1:15 p.m.

Upon arrival, the receptionist greeted us warmly with a big smile and seated us next to the fireplace. This was a great spot — not only for the cozy ambiance, but also for combating the cold weather that day.

Our server, Brian, was attentive and friendly. He immediately brought us water and asked if we’d like something to drink while we decided on our order. We opted for two Diet Cokes.

As we browsed the menu, we found it hard to choose, so Brian kindly shared the restaurant’s specialties and his personal recommendations.

I decided on the salmon sandwich, which came with a dill yogurt sauce, tomato, arugula, lemon and pickled onions on ciabatta bread, along with a side of garlic fries.

My companion chose the Philly steak melt sandwich with sweet potato fries. The wait for our food was surprisingly short, and the dishes arrived quickly.

The food was overall great, though I found the salmon sandwich a bit too salty for my taste, and the ciabatta bread was slightly soggy. That said, the garlic fries were outstanding — just be prepared for the garlic flavor to last for a good 24 hours, so you may want to skip seeing that special someone.

My companion enjoyed the Philly steak melt, and we both agreed the sweet potato fries were a delicious addition.

The cozy seating by the fireplace created the perfect ambiance for relaxing after a tiring day of skiing. This time, I was smart enough to save room for dessert. We ordered the pecan swiss roll, a chocolate rolled cake with chocolate ganache and marshmallow buttercream. It was sweet but not overly so, and the portion size was just right, a perfect ending to the meal.

While the food was enjoyable, the prices felt a bit steep for what we received. The quality was good, but it didn’t quite feel like an exceptional value for the cost.

Overall, The Foundry Grill is a great spot to unwind after a day on the slopes. The cozy atmosphere, friendly service and tasty food make it a worthwhile stop. If you visit, don’t skip the garlic fries or dessert.
