So your family just had an 'all-turkey day,' and in the midst of all the eating, you mumbled what you are grateful for along the lines of 'I am thankful that Thanksgiving only comes around once a year because I can only eat turkey for 10 hours straight one day out of the year.'
But there is still turkey leftover!
Here are five ideas on what to do with turkey leftovers:
1.Turkey sandwich. After the big meal, no one wants to even stay in kitchen for more than 10 minutes. Just grill the turkey slices while toasting buns, spread mustard and sprinkle pepper on the bread. Slap on a tomato slice, romaine lettuce and cheese. This snack takes very little time.
2.Chopped turkey salad. Add some varieties to a green salad. Combine and toss tomatoes, olives, scallions, garbanzo beans, lettuce and fresh basil with enough balsamic vinaigrette for flavor.
3.Turkey nachos. A fun snack for couch potatoes. Heat oven to 425 degrees. Whisk together lime juice, olive oil and garlic powder; toss in turkey and season with salt and pepper. Make a layer of tortilla chips to cover the bottom of the baking dish. Spoon refried beans evenly over chips. Top with turkey and sprinkle with shredded cheese. Add another layer of tortilla chips. Spoon salsa over chips. Top with more cheese. Bake nachos until cheese begins to bubble. Serve hot with more salsa, sour cream and cilantro.
4.Turkey tortilla pizza. Combine any of the following dried herbs and spices: cumin, garlic powder, chili powder, dried oregano and cayenne pepper. Toss in turkey strips. Pour olive oil in a skillet and add red pepper and onion strips. Saute until softened. Add turkey mixture and saute for two minutes. Preheat oven to 375 degrees. Brush flour tortillas lightly on one side with olive oil and bake for five minutes. Use tortillas as the base for pizzas. Cover tortillas with grated cheddar and then top with the turkey and veggie mixture. Sprinkle diced tomatoes on top. Bake the pizzas until the tops are beginning to brown lightly.
5.Turkey soup. Create a light and healthy meal after the hearty Thanksgiving dinner. Combine turkey stock, celery pieces, quartered potatoes, carrot pieces and quartered onions and bring to a boil. Reduce heat, cover and simmer for one hour. Stir in uncooked noodles and turkey meat. Simmer until noodles are done.
