Eating gluten-free is all the rage in the health-food world. Some eat gluten-free for health reasons, but some have no idea why they are eating that way and only do so because it’s trendy. A recent Jimmy Kimmel “Questions on the Street” segment asked some who eat gluten-free what gluten actually is. Of each person featured on the segment, no one knew specifically what it was. What is gluten, exactly? It is a mixture of two proteins that are often present in wheat and cereal grains. In light of this Jimmy Kimmel segment, we asked BYU students to try to answer this question.
