Red Wonder waffle finds a new home

Students and residents in Provo have come to love the Red Wonder, a popular menu item at local restaurant Waffle Love. Waffle Love sold its first waffle in July of 2012; shortly thereafter the liege waffles became a popular treat for those savvy enough to track down the mobile truck on the Internet. Recently the waffles have found a new, more stationary home, at 1796 N. 950 West in Provo. This brings easier access to the gaufres de Liège for local waffle lovers. The Red Wonder is the most popular waffle sold at the new location, according to Jennifer Lee, the 17-year-old Waffle Love team leader. The Red Wonder starts with a standard caramelized waffle smothered with Biscoff (a European cookie spread known as “speculoos” across the Atlantic), covered with whipped cream and finally topped with raspberries and strawberries. The waffles sold at all Waffle Love locations are made from a yeast-based dough and are specked with pearl sugar for added sweetness. The combination of the dough and pearl sugar gives these traditional Belgian waffles their trademark texture. The dough rises creating a flaky center, while the sugar melts and caramelizes on the waffle iron. This caramelization results in a crispy exterior while preserving the flaky interior. Waffle Love operates two mobile food trucks in Utah. To track their current location, please check the company’s website or social media platforms. Waffle Love’s new location is open from 10 a.m. to 10 p.m Monday–Friday and from 9 a.m. to 11 p.m. on Saturday.
